Egg and Cheese Breakfast Quesadillas
Ingredients:
2 eggs, beaten
Salt and pepper
2 flour tortillas
2 slices of bacon (crumbled, and/or cooked, crumbled sausage)
1/2 cup of shredded cheese
Salsa and sour cream
Instructions:
Heat a non-stick skillet over medium heat.
Add the beaten eggs and season with salt and pepper. Cook until set, stirring occasionally.
Remove the eggs from the skillet and set aside.
Place one tortilla in the skillet and sprinkle half of the cheese on top.
Add the cooked eggs, bacon, and the remaining cheese.
Top with the second tortilla.
Cook until the cheese is melted and the tortilla is golden brown, flipping once.
Cut into wedges and serve with salsa and sour cream.
